I love them and have also purchased them pre-grilled from our &quot;organic&quot; grocery store where they indeed cost a bit more than one would expect to pay for eggplant. Your recipe idea for aubergines w/tomato sauce is excellent. Thanks for sharing!</description>

Bake two whole aubergines in their skins in a 220 oven for about 30 mins.  When they are cool enough to handle peel the skins away and whisk the inner flesh with some tahini paste (approx 2 tbsp), lemon juice (from about one lemon), garlic crushed to a paste with salt and some freshly milled black pepper - all the amounts should be adjusted to your taste.

Serve with toasted pitta, or vegetables to dip.  And it&#039;s thrifty too - aubergines in the market are only about £1.50 for two at the moment.

		<description>Love aubergines and I&#039;m going to try your recipe too. We&#039;re not veggie in our house, but we rarely eat meat so I often make moussaka and lasagne with Vegemince or Quorn mince. Tastes just as good to me!</description>
